Hot and sour soup with tofu

Ingredients:
3 tbspVegetable oil
2 largeSweet red peppers, cored
-seeded and cut into

1 smallBunch green onions, cut
-diagonally into ? pieces

2 cupChicken broth, canned OR
-homemade
2 cupVegetable stock OR water
-(stock recipe in next post)
2 tbspSoy sauce
2 tspRed wine vinegar
1/2 tspCrushed red pepper flakes
1/4 tspSalt
1/8 tspPepper
2 tbspCornstarch
3 tbspWater
1 tspOriental sesame oil
1/2 lbsSnow peas, fresh or frozen
1 lbsFirm tofu, drained and cut
-into ? cubes
1 can(8 oz.) sliced water
-chestnuts, drained
Procedures:
1Heat oil in large saucepan over medium-high heat.
2Add pepper and onion; stir fry about 5 minutes.
3Add chicken broth, vegetable stock and soy sauce.
4Bring to boiling.
5Lower heat; simmer for about 5 minutes.
6Stir together vinegar, red pepper flakes, salt, pepper, cornstarch, water and sesame oil in a small bowl until smooth.
7Add to soup with fresh snow peas; cook for about 5 minutes or until thickened and bubbly.
8Add tofu, frozen snow peas if using, and water chestnuts.
9Gently heat through.
