Hot bacon dressing & flaming salad

Ingredients:
450 mlTarragon vinegar
2/3 literBacon grease
225 mlLemon juice
450 gramsSugar
225 mlWhite wine
50 gramsCorn starch
50 gramsPesto
1/3 kgChopped crisp bacon
Procedures:
1Combine the vinegar, bacon drippings, lemon juice and sugar in a sauce pot and bring to a strong boil.
2Dissolve the corn starch in the wine, then add to the boiling mixture.
3Throw in the bacon pieces and the pesto after the dressing has cooled completely.
4Chilled this should last a number of weeks
