| 1 | Preheat oven to 400 deg f. |
| 2 | Butter standard muffin cups. |
| 3 | In a large bowl stir and toss together flour, sugar, baking powder, and salt. |
| 4 | Set aside. |
| 5 | In a mixer bowl, beat the peanut butter a few seconds until smooth. |
| 6 | Add 2 tbsp milk and beat until smooth, add remaining milk and stir well. |
| 7 | Add egg and melted butter. |
| 8 | Stir until blended. |
| 9 | Add milk mixture to dry mixture and stir only until all flour is wetted. |
| 10 | Batter should be lumpy. |
| 11 | Spoon batter into muffin cups, filling each ?full. |
| 12 | Bake until toothpick inserted in middle comes out clean, about 15 minutes. |
| 13 | Cool muffins in tins for 5 minutes, then remove to wire rack to cool completely. |
| 14 | Makes about 16 muffins. |
