| 1 | Cut turkey tenderloins or chicken breasts into 6 slices by cutting across the turkey carefully with sharp knife. |
| 2 | Pound tenders to ?inch thickness. |
| 3 | Slit around edges to keep from curling. |
| 4 | Blend ?c of the oat bran cereal with salt and pepper and coat tenders. |
| 5 | Whip egg whites lightly with milk. |
| 6 | Blend remaining ?c oat bran with paprika. |
| 7 | Dip meat into egg whites, then into oat bran paprika mixture. |
| 8 | Place on baking rack and allow 5 minutes to dry. |
| 9 | Heat peanut oil in large frying pan until hot. |
| 10 | Brown tenders 2-3 pieces at a time for 3 minutes per side, or until crusty and brown. |
| 11 | Drain well and serve with a low-fat dip. |
