Ingredients:
21 ozCan pork and beans
1 largeOnion -- finely chopped
12 ozHeinz ketchup
1 tbspYellow mustard
1 cupLight brown sugar -- packed
1/8 cupMolasses
1/8 cupHeinz sweet gherkin pickle
Juice
1 tspApple cider vinegar
Salt -- to taste
Ground black pepper -- to
Taste
1/2 lbsSmoked bacon -- thickly
Sliced
Procedures:
1Preheat oven to 350 degrees.
2combine pork and beans, onion, ketchup, mustard, brown sugar, molasses, gherkin juice, vinegar, salt, and pepper to taste in a 2-quart casserole.
3Top with strips of bacon in a crisscross pattern.
4Cover with aluminum foil.
5Bake in preheated 350 degree oven for 1 ?hours.
6Remove foil for last 30 minutes of baking.
7Serve hot or cold.
8beans may be prepared up to one day ahead and refrigerated.
9Warm in 350 degree oven for no more than 20 minutes.
