| med | Potatoes, in | | | -very thin slices | | | Salt | | 3
| | Garlic cloves, minced | | 1
| tbsp | Parsley, minced |

Procedures:
| 1 | Heat the oil in a 9 or 10 inch skillet. | | 2 | Add the potato slices in layers, sprinkling each with salt. | | 3 | Add the minced garlic. | | 4 | Toss the mixture to coat potatoes evenly. | | 5 | Lower the heat, cover tightly and cook 20 minutes or until tender, scooping and turning occasionally. | | 6 | (the potatoes will be separated, not in a cake). | | 7 | Turn up the heat so that some of the potatoes brown. | | 8 | Sprinkle in the parsley and serve immediately. | | 9 | Notes: * garlic fried potatoes -- this recipe is |
