Ingredients:

| cup | Sugar | | 1/2
| cup | Water | | 1/4
| cup | Sweet dessert wine* | | 2
| tbsp | Orange juice | | 1/4
| cup | Fresh or dried lavender | | | -- flowers | | 1
| large | Ripe melon, cubed | | | GARNISH | | | Fresh mint leaves |

Procedures:
| 1 | *sauterne, grenache or sweet reisling. | | 2 | bring sugar, water, wine and orange juice to a boil; reduce heat and simmer for 5 minutes, stirring once or twice to dissolve sugar. | | 3 | Add lavender flowers. | | 4 | Cover and steep for 1 to 2 hours. | | 5 | Strain out lavender flowers, pressing on pulp. | | 6 | to serve, pour syrup over melon; gently toss. | | 7 | Garnish with mint leaves. | | 8 | yield: 4 to 6 servings. | | 9 | recipe developed by renee shepherd and fran raboff |
