Melon with lavender syrup

Ingredients:
1/2 cupSugar
1/2 cupWater
1/4 cupSweet dessert wine*
2 tbspOrange juice
1/4 cupFresh or dried lavender
-- flowers
1 largeRipe melon, cubed
GARNISH
Fresh mint leaves
Procedures:
1*sauterne, grenache or sweet reisling.
2bring sugar, water, wine and orange juice to a boil; reduce heat and simmer for 5 minutes, stirring once or twice to dissolve sugar.
3Add lavender flowers.
4Cover and steep for 1 to 2 hours.
5Strain out lavender flowers, pressing on pulp.
6to serve, pour syrup over melon; gently toss.
7Garnish with mint leaves.
8yield: 4 to 6 servings.
