Cajun fried potatoes

Ingredients:
4 largeWhite potatoes, unpared
-scrubbed
-Boiling, salted water
1/2 tbspSalt
1/4 tbspGround white pepper
1/4 tbspGround black pepper
1/4 tbspOnion powder
1/4 tbspGarlic powder
1/8 tbspGround cumin
1/8 tbspGround cayenne pepper
-About 2 c. oil, for frying
Procedures:
1Cut the potatoes into 1" cubes.
2Add to boiling salted water.
3Cook just until fork tender but not mushy, about 7 minutes.
4Drain and cool.
5Meanwhile, in a bowl, combine the salt, peppers, onion and garlic power, cumin and cayenne pepper.
6Add the potatoes to the spices.
7Toss to coat all pieces evenly.
8You may do this much in advance and hold the potatoes as long as an hour before completing the dish.
9Heat about 1" oil in a wok or deep skillet to about 350 degrees or until a piece of potato sizzles when added to the oil.
10Add the potatoes.
11Fry until golden brown on all sides, turning frequently.
12Remove from fat, drain and serve immediately.
