Ingredients:
| 4
| large | White potatoes, unpared | | | -scrubbed | | | -Boiling, salted water | | 1/2
| tbsp | Salt | | 1/4
| tbsp | Ground white pepper | | 1/4
| tbsp | Ground black pepper | | 1/4
| tbsp | Onion powder | | 1/4
| tbsp | Garlic powder | | 1/8
| tbsp | Ground cumin | | 1/8
| tbsp | Ground cayenne pepper | | | -About 2 c. oil, for frying |

Procedures:
| 1 | Cut the potatoes into 1" cubes. | | 2 | Add to boiling salted water. | | 3 | Cook just until fork tender but not mushy, about 7 minutes. | | 4 | Drain and cool. | | 5 | Meanwhile, in a bowl, combine the salt, peppers, onion and garlic power, cumin and cayenne pepper. | | 6 | Add the potatoes to the spices. | | 7 | Toss to coat all pieces evenly. | | 8 | You may do this much in advance and hold the potatoes as long as an hour before completing the dish. | | 9 | Heat about 1" oil in a wok or deep skillet to about 350 degrees or until a piece of potato sizzles when added to the oil. | | 10 | Add the potatoes. | | 11 | Fry until golden brown on all sides, turning frequently. | | 12 | Remove from fat, drain and serve immediately. |
