Ingredients:

| lbs | Yellow-eye beans | | 1/4
| lbs | Lean salt pork -- sliced | | 1
| med | Onion -- peeled | | 2
| tsp | Salt | | 1/2
| cup | Maple syrup | | 1
| tsp | Dry mustard | | 1/2
| cup | Cream |

Procedures:
| 1 | Cover beans with water, bring to a boil, set aside for an hour. | | 2 | Drain. | | 3 | Add fresh water and simmer until just tender. | | 4 | Drain, reserving bean liquor. | | 5 | Put whole onion and half of salt pork in large bean pot. | | 6 | Mix syrup, mustard and salt with hot liquor to cover beans, top with remaining por. | | 7 | Cover and bake for 6-8 hours at 275=b0, adding hot bean liquor as needed, to cover beans. | | 8 | Uncover and top with cream for last hour. | | 9 | ~ - - - - - - - - - - - - - - - - - | | 10 | recipe by : virginia rich, the baked bean supper murders |
