Ingredients:
2 Envelopes Unflavored Gelatin
4 cupApple Juice
2 tbspLemon Juice
2 cupRed Apples, Chopped
1/2 cupCarrots, Pared And Shredded2
1/2 cupCelery, Thinly Sliced
1/2 cupWalnuts, Chopped
1/4 cupRaisins
HONEY DRESSING
1/2 cupMayonnaise
1 tbspHoney
1 tbspLemon Juice
Procedures:
1Soften the gelatin in ?cup apple juice in a 2-quart saucepan.
2Add the remaining apple juice and cook over low heat until the gelatin is completely dissolved.
3Sir in the lemon juice.
4Refrigerate for 45 to 60 minutes or until thick and syrupy.
5Fold in the apple, carrot, celery, walnuts and raisins.
6Pour into a 6-cup mold.
7Refrigerate for 2 to 2 ?hours or until set.
8Meanwhile, prepare the honey dressing.
9to serve:
10unmold the gelatin mixture and spoon the honey dressing over the top.
11honey dressing:
12combine all of the ingredients, blending well.
13Refrigerate until serving time.
