Apricot-sweet potato tsimmes

Ingredients:
4 cupApricot nectar
1 cupChicken broth
6 tbspPareve margarine
1/2 cupChopped dried apricots
2 tbspBrown sugar
1/4 cupHoney
1 1/2 tspKosher salt
1/2 tspCinnamon
1/2 tspGround pepper
5 lbsSweet potatoes, peeled and
-sliced ? thick
4 largeCarrots, pared and sliced
1/4 cupPitted prunes
Procedures:
1Preheat oven to 400 °F.
2Generously grease a 13-by-9-inch baking dish.
3Combine nectar, broth, margarine, apricots, brown sugar, honey, salt, cinnamon and pepper into a large saucepan and heat until margarine melts.
4Add sweet potatoes and carrots; bring to a boil.
5Cover, cook until potatoes begin to soften, about 15 minutes.
6Using slotted spoon, transfer potatoes and carrots to prepared dish.
7Add prunes.
8Pour juices from pot over, press firmly to compact.
9Cover with heavy foil.
10Bake 30 minutes.
11Uncover and bake until potatoes are tender and beginning to brown on top, about 55 minutes.
12Let stand 15 minutes.
