Barley basil pilaf

Ingredients:
2 tspVegetable Oil
1 cupPear Barley Uncooked
2 cupChicken Broth
1/2 tspSalt
1/3 cupMinced Fresh Cinnamon
Basil OR Plain Basil
1/4 cupThinkly Sliced Green
Onions
1/8 tspGround Nutmeg
Procedures:
1Heat oil in a 1 quart saucepan over medium heat just until hot, not smoking.
2Add barley & cook 5 min. or until browned, stirring constantly.
3Add chicken broth & salt, bring to a boil.
4Cover & reduce heat & simmer 30 min. or until barley is tender and liquid is absorbed.
5Remove from heat.
6Stir in basil, green onions & nutmeg.
