Ingredients:

| med | Baking potatoes | | 1/2
| cup | Butter | | 1
| med | Onion -- chopped | | 1
| large | Green bell pepper -- | | | Chopped | | 1
| med | Red bell pepper -- chopped | | 3
| oz | Tasso -- diced | | 1/2
| lbs | Andouille or smoked sausage | | | Diced | | 1
| lbs | Small shrimp (cooked) -- | | | Chopped | | 1/2
| cup | Butter -- melted | | 12
| oz | Cream cheese -- cubed | | 1
| lbs | Crab meat | | | Salt to taste | | | Pepper to taste | | 2
| cup | Green onions -- chopped | | 1/2
| lbs | Cheddar cheese -- grated |

Procedures:
| 1 | Bake potatoes, and scoop out insides, reserving skins. | | 2 | Mash potatoes, and set aside. | | 3 | Melt ?cup buttter, and saute onion and bell peppers until limp. | | 4 | Add tasso and andouille; cook 4 minutes, add shrimp: cook lightly. | | 5 | Add ?cup butter and cream cheese: cook until cream cheese melts. | | 6 | Remove from heat. | | 7 | Stir in crabmeat and mashed potatoes. | | 8 | Mix well, and add salt and pepper, if needed. | | 9 | If consistency is too heavy, add more melted butter. | | 10 | Stuff mixture back into potato skins, and top with green onions and cheddar cheese... | | 11 | Bake until hot. | | 12 | Recipe |
