Cajun stuffed potatoes

Ingredients:
10 medBaking potatoes
1/2 cupButter
1 medOnion -- chopped
1 largeGreen bell pepper --
Chopped
1 medRed bell pepper -- chopped
3 ozTasso -- diced
1/2 lbsAndouille or smoked sausage
Diced
1 lbsSmall shrimp (cooked) --
Chopped
1/2 cupButter -- melted
12 ozCream cheese -- cubed
1 lbsCrab meat
Salt to taste
Pepper to taste
2 cupGreen onions -- chopped
1/2 lbsCheddar cheese -- grated
Procedures:
1Bake potatoes, and scoop out insides, reserving skins.
2Mash potatoes, and set aside.
3Melt ?cup buttter, and saute onion and bell peppers until limp.
4Add tasso and andouille; cook 4 minutes, add shrimp: cook lightly.
5Add ?cup butter and cream cheese: cook until cream cheese melts.
6Remove from heat.
7Stir in crabmeat and mashed potatoes.
8Mix well, and add salt and pepper, if needed.
9If consistency is too heavy, add more melted butter.
10Stuff mixture back into potato skins, and top with green onions and cheddar cheese...
11Bake until hot.
