Ingredients:
3 cupCelery, thinly sliced
1/2 cupCarrots, grated
1 Apple, unpeeled, cored, and
-diced
1/2 cupMayonnaise, (low-cal)
2 tbspSugar(used sugar substitute)
1/2 tspSalt
2 tbspVinegar
1/2 cupWalnuts, coarsely chopped
-(optional)
Procedures:
1Combine celery, carrots, and apples.
2Thoroughly blend remaining ingredients and fold into celery mixture.
3If desired, fold in walnuts or sprinkle over top as a gamish.
4Chill at least 30 minutes before serving in lettuce-lined bowl.
5Delightly crunchy! food exchange per serving: 1 fat exchange + ?fruit exchange (if you used the biggest apple ever).
6I would cut this recipe down to make this be 1 fat exchange for me and use sugar substitute.
7Could be used as a side dish for the vegetarian.
