Chard in dijon mustard sauce

Ingredients:
2 1/2 tbspOil
2 smallBunches of scallions
-- chopped
2 smallGarlic cloves, fine chopped
1/2 lbsMushrooms, sliced
1 lbsFresh chard, finely shredded
1 tbspDijon mustard
Procedures:
1Heat oil in a large skillet or wok.
2Saute the scallions and garlic for 2 minutes until softened and tender.
3Add mushrooms and cook for 4 to 5 minutes more.
4Add chard; cover and cook over low heat for about 5 minutes, until chard is tender but still crisp.
5Mix in mustard and heat for 1 to 2 minutes more.
6Stir and serve immediately.
7yield: 4 to 6 servings.
