Ingredients:

| large | Bunch spinach or other leafy | | | Greens | | 2
| | Onions, chopped | | 3
| large | Cloves fresh garlic, minced | | 1
| cup | Cooked brown rice | | 1/3
| cup | Grated cheese | | 2
| tbsp | Soy sauce |

Procedures:
| 1 | Clean spinach leaves well, remove stems and chop leaves and stems separately. | | 2 | In wok or skillet, saute stems, onion and garlic until onions are translucent. | | 3 | Stir in cooked rice. | | 4 | Lay spinach leaves on top of rice mixture. | | 5 | Cover pan and cook until spinach is wilted. | | 6 | Stir leaves into the rice mixture. | | 7 | Add the cheese and season to taste with soy sauce. | | 8 | Stir until the cheese melts and holds mixture together. |
