Ingredients:

| lbs | Green bananas | | 2
| cup | Chicken Stock | | 2
| tbsp | Butter | | 1
| | Small Onion, chopped | | 1
| cup | Light cream or milk | | 2
| | Eggs, beaten | | | Salt | | | Ground Nutmeg | | 1
| pinch | Cinnamon | | 1
| cup | Grated Cheddar Cheese | | 1/2
| cup | Fresh Bread Crumbs |

Procedures:
| 1 | Grated gruyere cheese can be used instead of cheddar cheese. | | 2 | Place bananas in saucepan and add just enough chicken stock to cover. | | 3 | Bring to a boil, reduce heat and simmer until bananas are tender, about 20 to 25 minutes. | | 4 | Using a potato masher, mash until smooth (chicken stock will be absorbed). | | 5 | Let cool slightly. | | 6 | Meanwhile, heat butter in a small frypan and saute onions until tender. | | 7 | Add the onions, cream, beaten eggs to cooked bananas until combined; season with salt, nutmeg and cinnamon to taste. | | 8 | Mixture will be quite moist. | | 9 | Place banana mixture in a buttered shallow baking dish. | | 10 | Combine cheese with bread crumbs; sprinkle over top. | | 11 | Bake at 350°F for 35 - 40 minutes or until top is golden. | | 12 | Serves 4 - 6. | | 13 | from the gazette, 91/02/13. |
