Ingredients:
2 lbsFresh greens (collards
- mustard greens, turnip
- greens
2 Slices lean bacon, diced
1/3 cupRed bell pepper
3 tbspChopped yellow onion
1/4 tspBlack pepper
Salt to taste
Procedures:
1Wash greens (shake excess water off).
2Cut off tough stems.
3Tear leaves into small pieces (bite-size is best).
4cook bacon in a skillet over moderate heat until crisp.
5Drain on paper towels.
6Pour off drippings retaining 1 t. add red pepper and onion to the retained drippings and saute until soft.
7Stir in greens and pepper and salt.
8Saute about 10 minutes or until greens are tender.
9Top with crisp bacon and serve.
