Ingredients:

| lbs | Fresh greens (collards | | | - mustard greens, turnip | | | - greens | | 2
| | Slices lean bacon, diced | | 1/3
| cup | Red bell pepper | | 3
| tbsp | Chopped yellow onion | | 1/4
| tsp | Black pepper | | | Salt to taste |

Procedures:
| 1 | Wash greens (shake excess water off). | | 2 | Cut off tough stems. | | 3 | Tear leaves into small pieces (bite-size is best). | | 4 | cook bacon in a skillet over moderate heat until crisp. | | 5 | Drain on paper towels. | | 6 | Pour off drippings retaining 1 t. add red pepper and onion to the retained drippings and saute until soft. | | 7 | Stir in greens and pepper and salt. | | 8 | Saute about 10 minutes or until greens are tender. | | 9 | Top with crisp bacon and serve. | | 10 | from joyce kohl |
