2 Garlic cloves, minced
1/2 tspTurmeric
2 tbspOlive oil
3 cupCoarsely grated carrots
1 Celery rib, grated
1/2 cupVegetable stock
1 tspGrated fresh gingerroot
1/2 tspCoriander powder
1/2 cupGrated fresh coconut
1 1/4 cupFrozen spinach
-- thawed and drained
Procedures:
1Saute scallions, garlic and turmeric in oil until scallions are soft.
2Add remaining ingredients, simmer for 10 minutes and serve.
