Ingredients:
6 1/2 cupCubed peeled baking potato
-(about 2 ?pounds)
2 eachGarlic cloves, halved
1/2 cup1% low-fat milk
1/2 cupLow-fat sour cream
2 tbspMinced fresh parsley
2 tbspMinced fresh oregano
1 tbspMinced fresh thyme
1 tbspMargarine
3/4 tspSalt
1/8 tspPepper
Procedures:
1Place potato and garlic in a large saucepan; cover with water and bring to a boil.
2Cook 20 minutes or until very tender; drain.
3Return potato mixture to pan.
4Add milk and remaining ingredients; beat at medium speed of a mixer until smooth.
5Yield: 6 servings (serving size: 1 cup).
