Ingredients:

| tbsp | Butter | | 1
| cup | Long-grain rice | | 1/2
| cup | Onion, chopped | | 1/2
| cup | Celery, chopped | | 2
| cup | Chicken stock | | 1/2
| cup | Dried apricots, diced | | 1/2
| tsp | Ground ginger | | | Salt | | 1/2
| cup | Toasted almonds, sliced |

Procedures:
| 1 | In large skillet, melt butter; cook rice, onion and celery over medium heat, stirring, for about 6 minutes or until rice is golden and onion is softened. | | 2 | stir in stock, apricots and ginger; bring to boil. | | 3 | Cover and reduce heat to medium-low; simmer for 15-20 minutes or until rice is tender and liquid is absorbed. | | 4 | season with salt to taste. | | 5 | Sprinkle almonds over top. |
