Ingredients:

| large | Spanish onions | | 1
| tbsp | Unsalted butter | | 3
| tbsp | Honey | | 1
| tbsp | Balsamic vinegar | | | Freshly ground pepper | | 2
| tbsp | Dried currants |

Procedures:
| 1 | Peel and cut onions in half lengthwise and slice into ?inch-thick semicircles. | | 2 | Place in a large skillet with butter, 1 ?c water, honey vinegar, and pepper to taste. | | 3 | Bring to a boil; cook over medium-low heat until most of the liquid has evaporated and onions are very soft, about 40 minutes. | | 4 | Continue to cook until onions are a deep golden brown, about 15 minutes more. | | 5 | Add water as needed to keep onions from scorching. | | 6 | Stir in currants and serve. | | 7 | martha stewart living/august/94 scanned & fixed by di pahl |
