Ingredients:

| cup | Seasoned breadcrumbs | | 1
| cup | Corn kernels | | 1
| cup | Zucchini, diced | | 1
| cup | Grated carrots | | 1
| cup | Beets, diced | | 1
| cup | Water | | | GLAZE | | 1/2
| cup | Honey | | 3
| tbsp | Dijon mustard | | 2
| tbsp | Balsamic vinegar | | 2
| tsp | Paprika (Which?)* | | 1/2
| tsp | Ground ginger | | 1 1/2
| tsp | Salt | | 1
| tsp | Pepper |

Procedures:
| 1 | Preheat oven to 350°F. | | 2 | Peel onion, slice in halfon the equator. | | 3 | Remove centres leaving a bowl in the onion halves. | | 4 | filling: in a bowl, stir together ?c breadcrumbs, corn, zucchini, carrots & beets. | | 5 | Firmly pack into onion hollows. | | 6 | Arrange in a shallow baking dish & pour water around the base. | | 7 | glaze: in a separate bowl, whisk together the glaze ingredients. | | 8 | Drizzle half the mixture over the top of the onions. | | 9 | Bake 30 minutes. | | 10 | Drizzle with remaining glaze & bake another 30 minutes. | | 11 | just before serving, sprinkle onions with remaining breadcrumbs & broil until the crumbs are toasted & golden brown. | | 12 | * the recipe doesn"t state which paprika, but i would opt for the sweeter hungarian variety. | | 13 | "vegetarian times" december, 1993 |
