Honey-glazed onions

Ingredients:
FILLING
10 medOnions, sweet variety
1 cupSeasoned breadcrumbs
1 cupCorn kernels
1 cupZucchini, diced
1 cupGrated carrots
1 cupBeets, diced
1 cupWater
GLAZE
1/2 cupHoney
3 tbspDijon mustard
2 tbspBalsamic vinegar
2 tspPaprika (Which?)*
1/2 tspGround ginger
1 1/2 tspSalt
1 tspPepper
Procedures:
1Preheat oven to 350°F.
2Peel onion, slice in halfon the equator.
3Remove centres leaving a bowl in the onion halves.
4filling: in a bowl, stir together ?c breadcrumbs, corn, zucchini, carrots & beets.
5Firmly pack into onion hollows.
6Arrange in a shallow baking dish & pour water around the base.
7glaze: in a separate bowl, whisk together the glaze ingredients.
8Drizzle half the mixture over the top of the onions.
9Bake 30 minutes.
10Drizzle with remaining glaze & bake another 30 minutes.
11just before serving, sprinkle onions with remaining breadcrumbs & broil until the crumbs are toasted & golden brown.
12* the recipe doesn"t state which paprika, but i would opt for the sweeter hungarian variety.
