Ingredients:

| med | Size zucchini diced | | 1
| large | Red bell pepper sliced | | 1
| large | Green bell pepper sliced | | 1
| large | Onion sliced | | 1
| tsp | Curry powder | | | Salt and pepper | | 2
| tbsp | Honey | | | Optional: | | 1
| | Sm box mushrooms sliced |

Procedures:
| 1 | Saute onion and pepper in a small amount of oil or butter in pan until crisp tender. | | 2 | Add zucchini and continue to cook until zucchini is tender but not soft. | | 3 | Season with curry, salt and pepper. | | 4 | Stir in a bit of honey to sweeten as desired. | | 5 | If using mushrooms, saute with the onion and peppers. | | 6 | Mixture should fit a 2 quart casserole. | | 7 | Reheat as needed. | | 8 | Flavors really blend nicely together and improves with age. | | 9 | Great with poultry. |
