Ingredients:
2 lbsRusset potatoes, boiled in
-skins till
Tender
1 bunchGreen onions, chopped
2 tspBasil, crushed, or italian
Herb seasoning
Black pepper, freshly ground
1/2 cupVegetarian broth, chicken
-flavored
Paprika, hungarian
3 tbspItalian parsley, freshly
-chopped, or
Fresh basil
For garnish
Procedures:
1Recipe by: deliciously low by harriet roth pg 220 peel cooked potatoes and dice in 1" cubes.
2Place in an 8x11x2" baking dish that has been sprayed with nonstick spray.
3Pour chicken stock over the potatoes and sprinkle generously with hungarian bake in a preheated 400 deg f. oven on upper shelf.
4Stir every 15 min unti to serve: garnish with freshly chopped italian parsley or fresh basil.
