Lean and luscious potato split

Ingredients:
1 Potato (about 10 ounces)
1/4 cupLowfat cottage cheese
2 tbsp-to
3 tbspLowfat milk
2 tbspToasted sunflower nuts
2 tbspChopped green bell pepper
2 tbspChopped carrot
2 tbspSliced green onions
1/4 cupShredded Cheddar cheese
1/8 tspPepper
Salt, to taste
3 Cherry tomatoes, halved
Procedures:
1Pierce potato with tines of fork; microwave on high about 8 minutes until potato is fork-tender.
2Halve and scoop out potato, leaving ?inch shells.
3In bowl mash potato pulp.
4Mix in cottage cheese and enough milk for a moist but firm consistency.
5Mix in sunflower nuts, green pepper, carrot, onions, half the cheddar cheese and the pepper to blend thoroughly.
6Season with salt.
7Mound into potato shells, dividing equally.
8Sprinkle with remaining cheddar cheese.
9Microwave on high about 2 minutes until cheese is melted and potatoes are heated through.
10Garnish with tomatoes.
11note: microwave cooking times are based on a 700-watt microwave.
12Adjust cooking times to your own oven.
