Mandalay green beans

Ingredients:
1 lbsGreen beans, ends trimmed
1 tbspOlive oil
1 largeGarlic clove, minced
2 tspJalapeno, seeded and minced
2 tspFreshly grated ginger
1/2 tspGround cumin seed
1/2 Orange, zest of
2/3 cupFresh orange juice
1 1/2 tbspLemon juice
1 tbspWhole grain mustard
Salt and pepper, to taste
Procedures:
1Bring a large pot of lightly salted water to a boil.
2Add green beans and cook only until tender crisp, about 3 to 5 minutes.
3Drain beans and plunge immediately into ice water to stop cooking action.
4Drain and cut into 1" pieces.
5in a large skillet, heat oil.
6Add garlic, jalapeno and ginger and saute, stirring, for 2 to 3 minutes.
7Add cumin seed and cook 1 minute longer.
8Stir in orange zest, orange and lemon juices and mustard.
9Add beans and stir until just heated through.
10Salt and pepper.
