Marinated butternut squash

Ingredients:
1 medButternut squash
1/4 cupBalsamic vinegar
2 tbspWater
1/2 tspSalt
1/2 tspPepper, freshly ground
2 tbspMint, chopped
Procedures:
1Peel skin from the squash and cut it in half.
2Carefully remove the seeds and stringy matter.
3Cut the squash into medium dice from the center.
4in a saute pan, put the balsamic vinegar and water, salt and pepper, and heat.
5Add the squash and cook for just a few minutes; it should remain firm.
6Remove the squash and liquid from the heat and put into a separate bowl.
7Cool completely.
8Add the chopped mint and serve as a garnish or side dish.
