Mashed sweet potatoes with pecans

Ingredients:
6 medSweet potatoes (about 2 lbs)
2 Eggs
2 tbspBarley malt syrup
2 tbspMargarine or butter, melted
Pn Salt
1 tspCinnamon
1 cupOrange juice
2 tbspHoney
1/2 cupPecan halves
Procedures:
1Preheat oven to 425 deg.
2Bake sweet potatoes until tender, about 45 to 60 minutes.
3Remove and discard skin.
4Reduce oven temperature to 375 deg.
5Mash potatoes and beat in eggs, syrup, one tablespoon margarine, salt and cinnamon.
6Add enough orange juice to moisten and make fluffy.
7Spoon into a 1 ?quart baking dish and drizzle with honey and remaining one tablespoon margarine.
8Sprinkle with pecans and bake for 20 minutes.
9Serve warm.
