Microwave mixed rice

Ingredients:
4 cupCooked rice
1/2 cupCooked and diced chicken
-OR- tofu
1/2 cupFrozen peas and carrots
-- thawed
1/2 cupThinly sliced celery
1/4 cupChopped green onions
1 Egg, beaten
2 tspLow sodium soy sauce
Procedures:
1In a large microwave-safe dish, combine rice, chicken or tofu, peas and carrots, celery, and green onions.
2Combine egg and soy sauce; stir into rice mixture.
3Cover and microwave on high power for 3 minutes; stir well.
4Cover and microwave on high for 2 to 4 more minutes.
5Makes 6 servings.
