| lbs | Potatoes, chopped | | | 1 ea Onion, chopped | | 3
| tbsp | Butter | | 4
| tbsp | Vegetable oil | | 1/4
| cup | Celery, chopped | | 1/2
| cup | Parmesan cheese | | 2
| cup | Milk | | 1
| tsp | Salt | | 2
| cup | Chicken broth, canned | | 3
| tbsp | Parsley |

Procedures:
| 1 | Boil potatoes in water to cover for 20 min. drain and mash. | | 2 | Saute onion in butter and oil. | | 3 | Add celery & carrots, cook 3 min. add this to potatoes with parmesan, salt, milk, and chicken broth. | | 4 | Simmer, stirring, for 3 min. add parsley, and serve with grated cheddar cheese. | | 5 | Kathleen conley (djhj39a) |
