Old fashioned baked beans

Ingredients:
1 lbsGreat northern or small
2 lbsMixed beans - Great
Northerns, white beans
Romans, and random mix.
1 tspSalt (omitted)
1 tspDry mustard
2 tspDry mustard
1/2 tspFresh ground black pepper
1/2 tspBlack pepper from a bottle
1 dashHot sauce
1 tsp(heaping) hot chili
Condiment
1/2 cupChopped onion
1 1/2 cupCoarse chopped onion
1/4 cupMolasses or honey
1/2 cup(scant) honey
1/4 cupBrown sugar
8 tspWhite sugar
1/4 cupCider vinegar
1/2 cupWhite vinegar
Procedures:
1Presoak beans.
2Drain.
3Combine dry ingredients and mix with beans; stir in other ingredients.
4Pour into 1 ?qt. or 2 qt. baking dish or bean pot.
5[obviously, if you double the recipe like i did, you"ll need a bigger pot :-] pour in boiling water to cover.
6Cover.
7Bake at 300 °F for 6 hours; add a bit of boiling water if needed.
8(crock-pot method: cook on low 8-10 hours).
9Comments: i just dumped everything on top of the beans and stirred them; then covered them with hot tap water.
10They took a lot longer than 10 hours to cook, but that might have been due to too-low heat on the crockpot.
11(also, reportedly vinegar and other acid substances need to be added at the end of cooking else they"ll make the beans tough).
12These beans were *really* good.
13The caramelized onions were even better.
14I"ve enjoyed the beans plain, with barbecue sauce, and with spinach and corn added.
