Ingredients:

| lbs | Okra, trimmed & sliced | | 1
| lbs | Tomatoes, peeled, quartered | | 1
| small | Onion, sliced | | 1
| oz | Margarine | | 2
| tbsp | Oil | | 4
| each | Green cardamoms | | | Salt & pepper | | 1
| tsp | Garam masala | | 2
| tbsp | Chopped coriander leaves |

Procedures:
| 1 | Melt margarine & oil in a wok & add the cardamoms. | | 2 | Fry for a few seconds then add the onion & salt & pepper to taste. | | 3 | Cook till soft, but do not brown. | | 4 | Add the okra & tomatoes & cook for a few more minutes, stirring frequently. | | 5 | Be careful not to overcook. | | 6 | As soon as the vegetables are cooked, sprinkle on the garam masala & chopped coriander & serve immediately. |
