Old fashioned macaroni & cheese

Ingredients:
3 1/2 cupUncooked elbow macaroni (12
-oz.)
1/4 cupButter
1/4 cupFlour
1 tspSalt
3/4 tspDry mustard
1/2 tspPepper
-Few dashes hot pepper sauce
3 1/2 cupMilk
5 cup(20 oz.) shredded cheddar
-divided
Procedures:
1Cook macaroni in boiling salted water until almost tender.
2Meanwhile, in a small saucepan, melt butter.
3Stir in flour, salt, mustard, pepper and hot pepper sauce.
4Cook and stir until smooth.
5Drain macaroni; combine with butter mixture in a large bowl and mix well.
6Stir in milk and 4 cups of cheese.
7Pour into an ungreased 13x9x2" baking dish.
8Cover and bake at 350 °F for 45 minutes or until bubbly.
9Sprinkle with remaining cheese; let stand 5 minutes before serving.
