Ingredients:

| tbsp | Butter or margarine | | 2
| tbsp | Flour | | 1
| tsp | Salt | | 1/8
| tsp | Pepper | | 1/8
| tsp | Paprika | | 1 3/4
| cup | Milk | | 1
| tsp | Salt | | 1 1/2
| cup | Onions, thinly sliced | | 4 1/2
| cup | Potatoes, thinly sliced | | 1/2
| cup | Water | | 2
| tbsp | Parsley, minced |

Procedures:
| 1 | Melt butter or margarine in saucepan. | | 2 | Blend in flour, 1 tsp salt, pepper and paprika. | | 3 | Gradually add milk and cook on a medium heat until thickened. | | 4 | Combine 1 tsp salt, onions, potaotes and water in saucepan. | | 5 | Turn to a high heat until steaming, then to a lower heat and cook for 10 minutes. | | 6 | Drain. | | 7 | Arrange 1/3 of potato-onion mixture in greased 1-?quart casserole. | | 8 | Sprinkle with 1/3 of parsley and pour 1/3 of sauce over potatoes and onions. | | 9 | Repeat two more times. | | 10 | Bake, uncovered, at 325 °F. | | 11 | For 45 to 60 minutes or until tender and brown. | | 12 | Makes 6 servings. |
