Malaysian stir-fried beef with vegetables

Ingredients:
1 lbsFlank steak
2 tspCornstarch
1 tspBrown sugar
5 tbspSoy sauce
1/4 cupPeanut oil
1 cupCauliflower, small florets
1/2 cupGreen pepper, thinly sliced
1 cupCarrots, matchstick size
1 cupMushrooms, sliced thin
1 cupBean sprouts, fresh
2 tspGinger, fresh grated
2 tspGarlic, minced
Procedures:
1Place the steak on a flat surface and, using a sharp knife, cut against the grain into slices about 2-in.
2Wide.
3Slice each piece of steak horizontally into 2 or 3 pieces.
4Stack the slices and cut into ?in.
5Strips.
6Add the cornstrach to the steak and toss to coat.
7Place the steak in a bowl and sprinkle over the sugar and soy sauce.
8Set aside.
9Heat 2 tbsp oil in a wok or large skillet and add the cauliflower, green pepper and carrot.
10Cook, stirring, until crisp-tender.
11Add the mushrooms and cook, stirring, about 30 sec.

13Add the bean sprouts and stir-fry for a few sec.

15Remove the vegetables with a slotted spoon and set aside.
16Add the remaining oil to the wok or skillet.
17When it is very hot, add the ginger and garlic and cook, stirring, for a few sec.
18Add the steak and cook, shaking the wok and stirring the strips of steak to separate them and cook evenly, about 1-2 min. Return the vegetables to the wok and toss quickly over high heat, then serve
