Pasta with catfish & artichokes

Ingredients:
2 Catfish Fillets
3 tbspMargarine -- low-fat
1 cupArtichoke Hearts -- sliced
1 Red Pepper -- cut in
Julienne stri
1 Carrot -- cut in julienne
Stri
1 Zucchini -- cut in julienne
Stri
2/3 cupLow Fat Milk
1/4 lbsAngel Hair Pasta -- or
Vermicelli
1/2 cupGrated Parmesan Cheese
1/4 tspGround Nutmeg
Procedures:
1Cut catfish in half crosswise and slice into thin strips.
2Saute catfish in melted margarine; add the vegetables and cook until tender.
3Stir in low fat milk; keep warm.
4Cook pasta according to package directions, drain.
5Toss well with cheese and catfish mixture.
6Sprinkle with nutmeg and serve immediately.
7serves 8.
