Papaya liqueur

Ingredients:
1 Papaya
1 cupVodka
1 smallLemon wedge, scraped peel
1/4 cupSugar syrup, optional to
-taste (see recipe)
Procedures:
1Look for medium-sized papaya (slightly larger than a pear) with smooth, unbruised skin, and a fruity aroma.
2Best time is may and june.
3Dark spots on the skin are a bad sign and will cause a bad flavor (check stem for decay and softness).
4Cut papaya in half, remove seeds, and peel skin.
5Cut in medium chunks and place in vodka with lemon peel(twist to release flavor).
6Let steep for 1 week.
7Strain and squeeze fruit, extracting juice.
8If desired, add sugar syrup.
9Store for 3 weeks.
10Yield: 1 pint container: quart ja
