Hypocrasse (spiced wine)

Ingredients:
1 Liter dry red wine
60 gramsCinnamon
60 gramsGround ginger
10 gramsGround cardamom
10 gramsGround nutmeg
10 Whole cloves
50 clRose water (optional)
100 gramsSugar (up to 200)
Procedures:
1Easy process: (more waste) pour the wine and spices in a large container.
2Wait 3 to 5 hours.
3Filter with a piece of old teeshirt.
4Filter again if desired with coffee filter.
5Add sugar and adjust to taste.
6Pour back in bottles or drink.
7Will keep at room temprature for about 2 weeks.
8Long process: (recommended) pour wine into large container.
9Put spices in a finely woven tight towel and tie shut making sure the wine will flow thru the spices and be permeated.
10Let the spice bag sit in the wine for 2 to 3 days, stirring occasionaly.
11Filter as above and add sugar.
12This method results in more yield because the spices wont turn into a slime blob at the bottom and use so much liquid.
