Ingredients:
1 1/4 cupUnbleached, unsifted flour
1 1/2 tbspBaking powder
1/2 tspBaking soda
1 dashBlack pepper
1 1/2 tspSugar
1 Egg, OR...
2 -Egg whites
1 1/2 tbspOil (or more)
- preferably light olive oil
2/3 cupButtermilk
1/3 cupFreshly grated parmesan
1/3 cupGrated part-skim provolone
-OR- mozzarella cheese
2 tbspChopped Italian parsley
1 tspChopped fresh basil
1 tspChopped fresh thyme
1 tspChopped fresh oregano
1/2 tspChopped fresh savory
Procedures:
1Combine first five ingredients in a mixing bowl.
2Add egg, oil, and buttermilk and stir until just blended.
3Stir in cheeses and herbs until just blended, and pour into greased bread pan (8-?x 4-?x 2-?inches).
4Bake 45 minutes at 350°F.
5Cool in pan 5 minutes, then turn onto cooling rack.
6Serve warm.
