Ingredients:
1/2 cupDry bread crumbs
1 tbspParsley, chopped
1/2 tspLemon-pepper
1 Egg
1 tbspMilk
1/3 cupFlour
-Vegetable oil for frying
4 (4-6 oz's. each) Alaska cod
-or pollock fillets
-thawed if necessary and
-cut into l-inch wide
-strips
-Salt
-Citrus Dipping Sauce
Procedures:
1Toss together bread crumbs, parsley and lemon-pepper in a shallow dish.
2Whisk together egg and milk in a second dish.
3Spread flour out on a third dish.
4Heat oil in a large non-stick skillet over medium-high heat.
5Season fish strips with salt.
6Dredge each strip in flour, shaking off excess.
7Dip in egg mixture, and then coat with bread crumb mixture.
8Saut fish until golden brown.
9Serve with citrus dipping sauce.
10Makes 4-6 servings.
