Ingredients:
2 xOnions, med chopped
6 xGarlic cloves, approx.
2 tbspKidney suet or lard
2 ozGebhardt's chili powder
1/2 ozRegular dark chili powder
3 lbsBeef cubed or coarse ground
1 cupBeef broth
3 ozPork sausage bulk
Green chili, med, minced
1/2 tspChili powder, hot new mexico
1/2 ozCumin
1/2 tspCoriander (optional)
6 ozTomato sauce
1/2 cupOregano tea *
1/2 ozSalt
1/4 tspPepper, cayenne (if needed)
Tabasco sauce, dash
Procedures:
1* 1 t. oregano steeped in hot water 30 min).
2Saute onions and garlic, minced in suet about 3 minutes.
3Add gebhardt"s and regular chili powder.
4Mix well.
5Brown beef in another pan, a pound at a time, adding white pepper while browning.
6Add meat to onions and spices, using a little broth to keep from sticking.
7Saute sausage and green chili pepper together 2 minutes.
8Add to the pot along with meat and onions.
9Cook 15 minutes.
10Add new mexico chili powder, cumin, coriander, tomato sauce and remaining broth.
11Mix well and cook for 30 minutes.
12Add oregano tea (strained).
13Cover and cook over low heat about 2 hours or until meat is tender, stirring occasionally.
14During the last 20 or 30 minutes add salt, pepper, cayenne and tabasco, if needed.
