Ingredients:

| x | Onions, med chopped | | 6
| x | Garlic cloves, approx. | | 2
| tbsp | Kidney suet or lard | | 2
| oz | Gebhardt's chili powder | | 1/2
| oz | Regular dark chili powder | | 3
| lbs | Beef cubed or coarse ground | | 1
| cup | Beef broth | | 3
| oz | Pork sausage bulk | | | Green chili, med, minced | | 1/2
| tsp | Chili powder, hot new mexico | | 1/2
| oz | Cumin | | 1/2
| tsp | Coriander (optional) | | 6
| oz | Tomato sauce | | 1/2
| cup | Oregano tea * | | 1/2
| oz | Salt | | 1/4
| tsp | Pepper, cayenne (if needed) | | | Tabasco sauce, dash |

Procedures:
| 1 | * 1 t. oregano steeped in hot water 30 min). | | 2 | Saute onions and garlic, minced in suet about 3 minutes. | | 3 | Add gebhardt"s and regular chili powder. | | 4 | Mix well. | | 5 | Brown beef in another pan, a pound at a time, adding white pepper while browning. | | 6 | Add meat to onions and spices, using a little broth to keep from sticking. | | 7 | Saute sausage and green chili pepper together 2 minutes. | | 8 | Add to the pot along with meat and onions. | | 9 | Cook 15 minutes. | | 10 | Add new mexico chili powder, cumin, coriander, tomato sauce and remaining broth. | | 11 | Mix well and cook for 30 minutes. | | 12 | Add oregano tea (strained). | | 13 | Cover and cook over low heat about 2 hours or until meat is tender, stirring occasionally. | | 14 | During the last 20 or 30 minutes add salt, pepper, cayenne and tabasco, if needed. | | 15 | Laverne harris, aka nevada annie, winner 197 |
