Ingredients:

| cup | Parsley, chpd | | 1/4
| cup | White wine OR sherry | | | Juice of ?lemon | | | Salt and pepper | | 2
| tbsp | Oil | | 2
| tbsp | Onion, diced | | 1 1/2
| lbs | Fresh bay scallops | | 1/2
| lbs | Mushrooms, sliced |

Procedures:
| 1 | Kingston harbour yacht club, mt. | | 2 | Prospect, il ** "garlic, garlic, garlic describes the scallops served at the khyc....crisp, buttery morsels..." mix together butter, breadcrumbs, garlic, minced onion, parsley, wine, lemon juice, and salt and pepper to taste. | | 3 | Form into roll and wrap with waxed paper. | | 4 | Chill until firm, at least 1 hr. | | 5 | Preheat oven 450°F. | | 6 | Grease shallow baking dish. | | 7 | Heat oil in lg skillet over med heat until haze forms. | | 8 | Add diced onion and saute until soft but not browned. | | 9 | Add scallops and mushrooms and salt and pepper to taste and saute briefly. | | 10 | Drain off liquid. | | 11 | Arrange scallop mixture in prepared dish. | | 12 | Slice garlic butter and arrange evenly over scallops. | | 13 | Bake until butter is hot and bubbly, 5-10 mins. | | 14 | Serve immediately. | | 15 | scallops can also be broiled. | | 16 | Place about 3" from heat and broil until bubbly, 3-5 mins. |
