Ingredients:
FAVORITE RESTAURANTS, BON A
2 Sticks butter, room temp
1 cupFresh bread crumbs
6 clGarlic, crushed
2 tbspOnion, minced
1/2 cupParsley, chpd
1/4 cupWhite wine OR sherry
Juice of ?lemon
Salt and pepper
2 tbspOil
2 tbspOnion, diced
1 1/2 lbsFresh bay scallops
1/2 lbsMushrooms, sliced
Procedures:
1Kingston harbour yacht club, mt.
2Prospect, il ** "garlic, garlic, garlic describes the scallops served at the khyc....crisp, buttery morsels..." mix together butter, breadcrumbs, garlic, minced onion, parsley, wine, lemon juice, and salt and pepper to taste.
3Form into roll and wrap with waxed paper.
4Chill until firm, at least 1 hr.
5Preheat oven 450°F.
6Grease shallow baking dish.
7Heat oil in lg skillet over med heat until haze forms.
8Add diced onion and saute until soft but not browned.
9Add scallops and mushrooms and salt and pepper to taste and saute briefly.
10Drain off liquid.
11Arrange scallop mixture in prepared dish.
12Slice garlic butter and arrange evenly over scallops.
13Bake until butter is hot and bubbly, 5-10 mins.
14Serve immediately.
15scallops can also be broiled.
16Place about 3" from heat and broil until bubbly, 3-5 mins.
