Baked bluefish

Ingredients:
3 lbsBluefish fillets
1/4 cupWhite wine vinegar
1 Bermuda onion -- sliced
1/4 tspPeppercorns
1/4 tspAllspice
1/2 cupSour cream
Procedures:
1Place bluefish fillets in a shallow ceramic or enameled baking dish.
2Combine vinegar, onions, peppercorns, and allspice.
3Pour over fillet, turning to coat.
4Marinate, skin side up, at room temperature, for 1 hour.
5Pour off vinegar, but not onions or spices.
6Turn skin side down and spread top with sour cream.
7Bake at 350 °F for 20-25 minutes, until fish flakes easily with a fork.
