Baked orange roughy with cheese & mushrooms

Ingredients:
1 tbspMargarine
4 Large scallions, sliced
1 lbsMushrooms, sliced
1 1/2 lbsOrange roughy fillets
1/4 cupDry white wine
2 tbspLemon juice
1/2 tbspDried marjoram
Black pepper
4 Slices cheese, cut into
-? strips
2 tbspUnseasoned bread crumbs
Procedures:
1Preheat oven to 400 deg f.
2Grease a shallow 2-quart baking dish with margarine.
3Evenly scatter the scallions and mushrooms over the bottom of the dish.
4Place fillets on top in a single layer.
5(overlap or tuck under, the thin ends of the fillets).
6Mix wine and lemon juice together and pour over the fish.
7Sprinkle with marjoram and black pepper.
8Evenly distribute the cheese strips over the fillets.
9Crumple a large piece of waxed paper and wet it.
10Shake off excess water and and place the paper loosley over the fish.
11Bake for about 7 minutes.
12Remove fish from the oven, take off the waxed paper.
13Sprinkle fish with bread crumbs.
14Bake another 7-9 minutes or until fish is just done.
15Remove the fish from the oven and heat the broiler and broil just long enough to brown the top of the fillets, about 1 minute.
16Substitiue: cod, haddock, catfish, ocean perch or rockfish.
