Ingredients:

| lbs | Catfish fillets | | 1
| tsp | Hot sauce | | | Salt (to taste) | | | Pepper (to taste) | | 3
| | Eggs (beaten) | | 1 1/2
| cup | Cornmeal | | | Cooking oil |

Procedures:
| 1 | Rub fish with hot sauce, salt and pepper. | | 2 | Set aside for 1 hour or more. | | 3 | Cut fish into bite-size pieces and dip into eggs. | | 4 | Roll in cornmeal. | | 5 | Fry quickly in deep fat for 2 or 3 minutes, or until golden brown. | | 6 | Drain. | | 7 | note: serve hot. |
