Bayou catfish balls

Ingredients:
2 lbsCatfish fillets
1 tspHot sauce
Salt (to taste)
Pepper (to taste)
3 Eggs (beaten)
1 1/2 cupCornmeal
Cooking oil
Procedures:
1Rub fish with hot sauce, salt and pepper.
2Set aside for 1 hour or more.
3Cut fish into bite-size pieces and dip into eggs.
4Roll in cornmeal.
5Fry quickly in deep fat for 2 or 3 minutes, or until golden brown.
6Drain.
