Marinated beef and pasta salad

Ingredients:
1 lbsMostaccioli or Ziti, OR
- other medium pasta shape
- (uncooked)
2 tbspVegetable oil
3 tbspLemon juice
2 tbspRed wine vinegar
1 tbspFresh chopped oregano
1 tbspFresh chopped thyme
2 tbspDijon mustard
1 tbspDried oregano
1 tbspDried thyme
1/2 cupFresh parsley, chopped
10 largeMushrooms, sliced
2 cupLeftover flank steak
-or roast beef, julienned
2 cupSnow peas, chopped in half
1 Red bell pepper
- ribs and seeds removed
- julienned
1 Yellow bell pepper
- ribs and seeds removed
- julienned
Salt
Freshly ground black pepper
Procedures:
1Prepare pasta according to package directions; drain.
2In a large bowl, mix vegetable oil, lemon juice, vinegar, parsley, oregano, thyme, mustard, mushrooms, and beef.
3Add snow peas and peppers and mix thoroughly.
4Add pasta and mix again.
5Serve immediately or refrigerate for one hour and serve cold.
6Season to taste with salt and pepper.
7Serves 10 to 12 each serving provides: 269 calories; 16.2 g protein; 34.6 g carbohydrates; 7.1 g fat; 24.3 mg cholesterol; 35.8 mg sodium.
