Cajun sole (stuffed)

Ingredients:
4 ea Sole fillets (8 0z. ea)
1/3 cupRed or green pepper, chopped
2 tspGreen onions, sliced
2 tbspButter
1 tbspParsley, chopped
1/4 tspCayenne
1/4 tspSalt
1/8 tspPepper
1 cupCornbread stuffing mix
2 tbspChicken broth or water
1 canCorn (8 oz.) drained
Procedures:
1Fillets should be about ?inch thick x 10 inches long.
2In 1 quart casserole combine chopped pepper, onions, butter, parsley, cayenne, salt and pepper.
3Micro at high 2 to 3 min. add remaining ingredients except sole.
4Mix well.
5Spread ?of this stuffing down center of each fillet.
6Roll up enclosing stuffing.
7Secure with wooden picks.
8Stand on end in 9 inch pie plate.
9Cover with plastic wrap.
10Micro at medium-high for 8-10 min. let stand, covered, for 3 minutes.
