Ingredients:
3 tbspSalted butter
2 eachCloves garlic, finely

2 largeRipe tomatoes, peeled

1 1/2 tspFinely chopped fresh

1/4 cupDry sherry
2 1/2 lbsLarge raw shrimp, shelled

FOR THE SAUCE
4 tbsp( ?stick ) salted butter
3 tbspAll-purpose flour
1 cupFish stock
-or clam juice
1 cupMilk
Salt and freshly ground
-black pepper to taste
Few dashes of Tabasco

1In a large skillet, heat the butter, when it begin to foam, add the garlic, tomatoes, coriander, sherry, and shrimp, and cook, stirring, 4 to 5 minutes.
2To prepare the sauce, in a saucepan over low heat, melt the butter.
3When it begins to foam, add the flour and cook, stirring, until well blended but not brown, 2 minutes.
4Raise the heat to medium, whisk in the stock and milk, and cook, whisking, until the mixture comes to a boil.
5Add the salt, pepper, tabasco, and worcestershire.
6Add the sauce to the shrimp, stir to blend, and cook over low heat 3 to 4 minutes.
