Carrot bundle fish

Ingredients:
4 medCarrots in strips
1 cupItalian bread crumbs
1/3 cupButter or margarine, melted
1/2 tspSalt
1/4 tspPepper
2 tbspLemon juice
1 lbsSole or orange roughy
Procedures:
1Heat oven 375°F.
2Add carrots and enough water to cover in saucepan.
3Bring to full boil & cook over med. heat until carrots are crispy tender (6-8min).
4Meanwhile, in sml bowl combine all ingrediants except fish; set aside.
5when carrots are done, seperate fish fillets & divide carrots equally among fillets.
6Wrap each fillets around each portion of carrots.
7Place fillets, seam down, in 9" sq. baking pan (slightly sprayed w/grease).
8Sprinkle fish bundles with stuffing mixture.
9Cover and bake for 10 minutes.
10Uncover; continue baking for 8-10 more minutes or until fish flakes with fork.
